Le salage est aussi pratiqué pour le poisson, essentiellement le hareng. Placé dans un panier, recouvert d'un peu de sel puis de paille : c'est le «hareng» poudré. Il peut être salé dans des tonneaux, les caques, il devient «hareng caqué». Les poissons ainsi traités peuvent se conserver une année.
